Dek kerana panas, kadang-kadang cancel semua plan sebab malas nak bergerak. Kalau hujan belah petang pulak, memang selebat-lebatnya. Mungkin itu sebabnya ramai yang dah start demam, batuk dan selsema termasuk saya. &lt;br /&gt;&lt;br /&gt;Kali ni untuk hilangkan rasa dahaga dan panas, jom kita buat Teh Bunga sendiri. Bukan susah pun bahannya. Pergi mana-mana kedai ubat cina dan beli bunga untuk teh ni dan gula batu. Pertama,  nasi ni selalu disediakan oleh arwah emak. Keduanya, nasi ini juga merupakan hidangan yang dimasak sendiri oleh arwah emak ketika majlis pertunangan saya dengan suami 9 tahun dulu. Sayangnya,  saya tak sempat belajar dari arwah ibu resepi nasi ni. Mujur saya jumpa buku Masakan Tradisi Melayu Johor karya Noraini Margono. Resepi nasi jagung ni tak menggunakan susu cair, jadi lebih baik untuk kesihatan.&lt;br /&gt;&lt;br /&gt;Bahan A:&lt;br /&gt;3 pot beras brasmathi&lt;br /&gt;3.5 pot air&lt;br /&gt;1 sudu besar garam&lt;br /&gt;1/2 cwn minyak jagung&lt;br /&gt;2 sb esen perasa jagung&lt;br /&gt;1 cwn sayur-sayuran campur&lt;br /&gt;&lt;br /&gt;Bahan B:&lt;br /&gt;Rempah penumis ( 1 btg kayu manis, 1 kuntum bunga lawang, 2 biji buah pelaga dan 2 biji cengkih)&lt;br /&gt;1 btg serai - dititik&lt;br /&gt;2 ulas bwg putih - dikisar&lt;br /&gt;4 cm halia - dikisar&lt;br /&gt;1 labu bwg besar dihiris&lt;br /&gt;&lt;br /&gt;Cara-cara:&lt;br /&gt;&lt;br /&gt;Cuci beras dan toskan.&lt;br /&gt;&lt;br /&gt;Masuk air dan garam dalam periuk nasi elektrik dan biarkan mendidih. &lt;br /&gt;*saya masuk dalam periuk ni dan tekan switch on. Bukan masak atas api ye.&lt;br /&gt;&lt;br /&gt;Panaskan minyak jagung dalam kuali dan tumis semua bahan B. Apabila bawang sudah kekuningan, masukkan beras dan gaul hingga beras berkilat. Tutupkan api.&lt;br /&gt;&lt;br /&gt;Apabila air telah mendidih dalam periuk nasi, masukkan beras yang telah ditumis tadi dan esen perisa jagung. Kacau beras rata-rata dan biarkan masak. Jangan kacau beras hingga airnya kering.&lt;br /&gt;&lt;br /&gt;Setelah air kering, gaulkan nasi agar peroi, kemudian masukkan sayur-sayuran campur dan gaul rata. Gaul rata hingga semua sebati.&lt;br/&gt;&lt;br/&gt;Masukkan bahan C dan kacau rata. Kalau di Singapura, yang paling terkenal ialah di Beach Road. Tapi saya tak sanggup nak makan. Pertamanya, sup tu menggunakan tulang kambing. Saya tak makan kambing melainkan qibas. Yang kedua, saya takut melihat warnanya yang telalu merah. Pernah saya baca yang bahan pewarna merah digunakan untuk menaikkan warna masakan di sana. &lt;br /&gt;&lt;br /&gt;Saya dah masak sup ni berulang kali dan setiap kali itu resepinya berbeza. Akhirnya, saya ubahsuai resepi-resepi yang saya pernah guna. Hasilnya, husband saya lebih suka resepi yang ini. &lt;br /&gt;&lt;br /&gt;Bagi yang tidak pernah merasa sup ni, sup ni seharusnya pekat dan berasa masam sedikit. Ada dua cara yang agak selalu digunakan untuk memekatkan sup iaitu dengan memecahkan telur pada kuah sup atau melecekkan kentang, carrot dan celery yang dah direbus. Saya tak gunakan dua-dua cara. Sebaliknya, saya gunakan tomato puri dalam amaun yang lebih dan mengurangkan air.&lt;br /&gt;&lt;br /&gt;Selalunya sup ni dihidangkan bersama roti perancis. Tapi kalau dpt makan dengan nasi panas-panas pun sedap. Untuk hidangan saya kali ni, saya hidangkan sup ni bersama nasi jagung, ayam masak beriani dan pencuk.&lt;br /&gt;&lt;br /&gt;Bahan-bahan:&lt;br /&gt;&lt;br /&gt;Bahan A&lt;br /&gt;1 kilo tulang lembu atau kambing&lt;br /&gt;3 helai daun pandan&lt;br /&gt;5 ulas bawang putih&lt;br /&gt;1 inci halia&lt;br /&gt;&lt;br /&gt;Bahan B&lt;br /&gt;2 biji bawang besar &lt;br /&gt;4 ulas bawang putih&lt;br /&gt;1 inci halia&lt;br /&gt;10 tangkai cili kering&lt;br /&gt;*&lt;b&gt;dikisar&lt;br /&gt;&lt;br /&gt;Bahan C&lt;br /&gt;1 sb ketumbar&lt;br /&gt;1 sk jintan halus&lt;br /&gt;1 sk jintan kasar&lt;br /&gt;&lt;/b&gt;*disangai dan dikisar kering&lt;br /&gt;&lt;br /&gt;Bahan D&lt;br /&gt;100g Tomato puri (atau 1 tin kecil)&lt;br /&gt;1/2 cwn sos tomato&lt;br /&gt;2 sb kicap&lt;br /&gt;1 btg carrot - dipotong dadu&lt;br /&gt;1 biji kentang - dipotong dadu&lt;br /&gt;1 batang celery - dipotong dadu&lt;br /&gt;&lt;br /&gt;Bahan E&lt;br /&gt;1/2 cwn kacang peas dalam tin&lt;br /&gt;2 tangkai daun sup - dihiris&lt;br /&gt;2 tangkai daun bawang - dihiris&lt;br /&gt;Garam &lt;br /&gt;Gula&lt;br /&gt;&lt;br /&gt;Cara-cara:&lt;br /&gt;&lt;br /&gt;Rebus bahan A hingga empuk. &lt;br /&gt;&lt;br /&gt;Panaskan minyak dalam kuali atau periuk lain. Tumiskan bahan B  dan C sehingga garing. &lt;br /&gt;&lt;br /&gt;Masukkan bahan D, tulang dan air rebusan tulang. Perlu ingat jangan letak air rebusan terlalu banyak hingga kuah menjadi cair.&lt;br /&gt;&lt;br /&gt;Masukkan bahan E tetapi untuk daun sup dan daun bawang hanya guna separuh sahaja.&lt;br /&gt;&lt;br /&gt;Bila sudah masak, tutup api. Mula lah teringat air-air yang boleh sejukkan panas dalam badan ni macam barli, teh bunga (yang ori tau bukan dalam kotak) dan lai chi kang. Eh, buat lai chi kang lah. &lt;br /&gt;&lt;br /&gt;Kalau balik Johor, boleh la pergi Gerai Ah Yong kat Medan Selera Seri Terbau. Ini kat KL. Kalau beli pun belum tentu isi dia banyak. Hidupkan keta, jom pergi kedai ubat cina cari bahan.&lt;br /&gt;&lt;br /&gt;Resepi ni tak de sukatan sebab saya agak-agak bahan dan rasanya. Lagi satu, saya tak pakai gula pasir sebab lagi suka manis dari gula batu. Masakkan hingga barli dan longan kering kembang. Masa ni kena cuba rasa manisnya. Kalau tak cukup manis, tambah gula batu lagi. Bila dah rasa ok, tutup api.&lt;br /&gt;&lt;br /&gt;Kalau nak hidang panas, boleh terus hidang. Feeling ala-ala kampung gitu! Cicah pulak dengan sambal kicap, air kopi 'o'. Oh, tak sukanya! sebab bancuhan dia jenis berongga, jadi serap banyak minyak. Ambil 6 biji bawang putih dan basuh. Jangan buang kulit. Tumbuk. Panaskan 1/2 cawan minyak. Tumiskan bawang putih sehingga garing. Sejukkan.&lt;/li&gt;&lt;li&gt;Blend bawang putih, bawang merah, buah keras, serai, lengkuas dan cili blend.&lt;/li&gt;&lt;li&gt;Tumis bahan blend sampai masak aka naik minyak. Masukkan garam &amp;amp;amp; gula.&lt;/li&gt;&lt;li&gt;Letak ikan atas foil. Kalau boleh lapik la ikan tu dengan daun kunyit or daun pisang.&lt;/li&gt;&lt;li&gt;Tuangkan kuah blend yang dah dimasak. lepas tu taburkan bendi&lt;/li&gt;&lt;li&gt;Tuangkan minyak bawang putih.&lt;/li&gt;&lt;li&gt;Lipatkan foil.&lt;/li&gt;&lt;li&gt;Boleh bakar dalam oven, atas api cara BBQ atau atas kuali capati (kuali leper). Kalau nak tau dah masak ke belum..aluminium foil tu masa bakar biarkan menggelembung dlm 5 minit.&lt;/li&gt;&lt;li&gt;Kalau tak nak bakar terus, boleh simpan pek2 aluminium foil yg dah siap dlm freezer. Pernah jugak tanya mak kenapa nama dia sambal pengantin. Dia kata sebab org dulu2 hanya dpt makan daging lembu masa kenduri kahwin kebanyakannya. Itu sebab dipanggil begitu.&lt;br /&gt;&lt;br /&gt;Masak lauk ni memang renyah. Kena rebus dulu bahan2 dia then tunggu sejuk baru potong dadu. Lepas tu goreng pulak. Kemudian masak tumisan dia. Tu sebab kalau nak masak pun masa yang sesuai time raya. Kalau nak raya...lagi tiga hari kami dah prepare barang2 dia.&lt;br /&gt;&lt;br /&gt;Cara nak buat...&lt;br /&gt;~sorry ye ni resepi x de sukatan betul2 sebab arwah mak ajar masak dulu pun main agak2 je~&lt;br /&gt;&lt;/span&gt;&lt;/div&gt;&lt;ol style="font-family: 'trebuchet ms';"&gt;&lt;li&gt;1 kg Paru lembu&lt;/li&gt;&lt;li&gt;1 kg Daging lembu&lt;/li&gt;&lt;li&gt;1 kg Hati lembu&lt;/li&gt;&lt;li&gt;1 kg Udang&lt;/li&gt;&lt;li&gt;Cili kering yang dikisar (dalam dua senduk)&lt;/li&gt;&lt;li&gt;Bwg putih + Bawang merah (kisar..portion bwang merah kurangkan sikit dari bwg putih) - 1/2 senduk&lt;/li&gt;&lt;li&gt;Serai + Lengkuas (kisar) - 1/2 senduk&lt;/li&gt;&lt;li&gt;Bawang goreng ( Byk!!!)&lt;/li&gt;&lt;li&gt;Air asam jawa (1/2 cwn)&lt;/li&gt;&lt;li&gt;Cili kering yang digunting serong (rendam dlm air panas dan kemudian toskan)&lt;/li&gt;&lt;li&gt;Gula melaka (beli yang dah dihancurkan lagi senang)&lt;/li&gt;&lt;li&gt;Gula pasir&lt;/li&gt;&lt;li&gt;Santan (kalau guna santan kotak tu pakai 1 kotak)&lt;/li&gt;&lt;/ol&gt;&lt;ul style="font-family: 'trebuchet ms';"&gt;&lt;li&gt;Rebus paru , hati dan daging. Potong dadu dan goreng.&lt;/li&gt;&lt;li&gt;Kupas udang. Kulit dan kepala direbus utk dapatkan air dia. Goreng isi udang sekejap.&lt;/li&gt;&lt;li&gt;Tumis bahan2 kisar + cili boh. masa tumis tu bila dah agak garing masukkan air udang sikit. Then biarkan garing balik..masuk lagi dan ulang sampai habis.&lt;/li&gt;&lt;li&gt;Masukkan cili kering yang dipotong serong. Then bila naik minyak masukkan air asam jawa.&lt;/li&gt;&lt;li&gt;Santan separuh kotak dicairkan then masuk dalam tumisan&lt;/li&gt;&lt;li&gt;Masukkan paru, hati, daging dan udang yang digoreng tadi.&lt;/li&gt;&lt;li&gt;Then masukkan gula melaka dan gula pasir. Portion gula melaka kena lebih dari gula pasir. Then garam dan serbuk perasa.&lt;/li&gt;&lt;li&gt;Bila dah separuh kering masukkan santan pekat and taburkan bawang goreng&lt;/li&gt;&lt;li&gt;Gaul hingga agak2 basah sikit. Jangan kering sgt nanti x sedap&lt;/li&gt;&lt;/ul&gt;&lt;div style="margin-bottom: 0px; margin-left: 0px; margin-right: 0px; margin-top: 0px;"&gt;&lt;span style="font-family: 'trebuchet ms';"&gt;Boleh makan dgn nasi himpit @ lotong nasi, nasi putih or roti. Kalau nak tahan lama, simpan dlm freezer and panaskan balik bila nak makan. Tinggal bahagian ekornya. Cuci dan toskan. Lap dgn tisu dapur utk serapkan air lebihan pada udang tersebut&lt;/li&gt;&lt;li&gt;Bancuh tepung tempura dengan air. Jangan terlalu cair. Agak-agak macam boleh salut udang tu.&lt;/li&gt;&lt;li&gt;Celup udang dalam bancuhan tepung. Pastikan bahagian ekor tak disaluti tepung.&lt;/li&gt;&lt;li&gt;Then celup pulak dalam bancuhan roti.. rehatkan sekejap udang dalam tu selama 2-3 minit.&lt;/li&gt;&lt;li&gt;Panaskan minyak. Make sure betul-betul panas. Then goreng udang tadi. This step kena careful sebab udang tu akan meletup-letup because of the serbuk roti.&lt;/li&gt;&lt;li&gt;Bila dah kekuningan angkat dan toskan.
